Job Summary

The University of Colorado Boulder, for campus in Boulder, seeks a Chef de Cuisine. This is a culinary leadership role, with oversite of multiple restaurant concepts or areas within an operation. In the absence of the Executive Chef, this position will assume the duties and general procedures for unit of oversite & Campus Dining Services, as well as formulate the execution of menus and procedures in restaurant concepts, staff, scheduling, hiring, and training. Understands sourcing, procurement, food costs, pricing, labor costs and assesses area of oversite to ensure fiscal and operational feasibility are in line with parameters set by the Associate Director of Culinary and Sr. Executive Chef. Responsible for staff development and conflict resolution in their area. This position will be required to place orders for their unit or restaurant, and may be required to fill in for the Manager of Operations & Sourcing in their absence. This position exists to create fresh, high quality and on-trend menus for their restaurant or unit, including recipe development. Supervises their Sous Chefs as they determine break schedules, service quality, A9, food safety and sustainability standards, all while offering excellent customer service in a team-driven and supported environment.

What We Require

  • Four years of experience in large food service operation, or in the alternative, an Associate’s Degree or graduation from a culinary program, plus two years of experience in large food service operation
  • In lieu of the minimum job requirements, alternative requirements for the position are a Bachelor's Degree in any field plus two years of experience in a large food service operation (72 months of experience).
  • English proficiency. 
  • Must complete all university required trainings within 30 days of hire. 
  • Servsafe certified and or certificate appropriate for the position level or the ability to obtain Servsafe certification or certificate appropriate to position level within 6 months of hire. Must possess appropriate Servsafe certification or certificate appropriate to position level for the duration of employment with Housing & Dining Services.
  • Ability to lift up to 50 pounds of weight occasionally, up to 20 pounds of weight frequently and up to 10 pounds of weight constantly.
  • Ability to climb, balance, stoop, kneel, crouch, crawl, reach, handle, finger, and feel to perform job duties.
