Job Summary

Housing and Dining Services at CU Boulder now welcomes applications for a Sous Chef! This is a hands-on culinary working position that provides extensive oversight, leadership, and input in their assigned dining location and overall dining services when needed. In the absence of the Chef de Cuisine, this position will assume the duties and responsibilities of that position. Under the general supervision of the Executive Culinary Team, provide input for new and existing products/menus/recipes and test them to ensure the accuracy of ingredients, methodology, yield, authenticity, and quality. This position exists to assign and delegate standardized recipe preparation, ensuring quality, A9 and food safety standards are followed in the specific assigned production area. Leads the work of others in the kitchen, including performance plans and review for Head Line Cooks and BOH Dining Attendants in the kitchen. Responsible for determining schedules for the aforementioned areas based upon organizational needs and staff schedules, all while offering excellent customer service in a team-driven and supported environment.

What Your Key Responsibilities Will Be

Quality Assurance

  • Provide and ensure customer service standards are met in the assigned functional area.
  • Ensure all ParTech and A9 labeling procedures are followed during schedule shift and determines corrective action when out of compliance, including verifying accurate labeling, troubleshooting equipment, and staff education.
  • Conducts audits of efficiency and effectiveness to manage and control cost. Offer recommendation and solutions to the Executive Culinary team to improve daily operations of functional area.
  • Assist in the creation of standardized operating procedures and training methods.
  • Ensure all areas are set up and broken down in accordance with SOP's. Comply and enforce sanitation regulations and safety standards.
  • Actively contributes to menu development with Executive Culinary team, which includes oversight over inventory and recommending purchasing needs specific to the functional area/kitchen needs.
  • Services on the food safety response team and response to all food safety emergencies as appropriate to the work assignment. If a work cell phone is provided, a response call must be within an hour of the original call and/or message.


  • Assist in the culinary staff selection, training, and onboarding process.
  • Empower others to make decisions in areas within their span of control, and participates in measure to increase empower response rate and overall score.
  • Ensure employees follow the assigned schedule, appropriate break times and follow proper procedures of requesting time off.
  • Responsible for performance plans for direct reports and hold employees accountable, following progressive discipline processes. Discusses staff issues with Executive Culinary Team and collaborates on the best solution.
  • Display and demonstrate excellent communication skills. Coaches others to develop their communication skills.

Kitchen Prep/Operation

  • Prep, assemble, and delegate food preparation tasks, and makes decisions based on product outages and menu changes.
  • Understand and utilize all production equipment in the assigned facility. Places work orders as needed.
  • Assist with ordering and receiving of the product as need.
  • Successfully passes ServSafe and offers tutoring assistance to staff.

What We Require

  • Four years of food service experience. 
  • Graduation from a culinary program may substitute for two years of experience. 
  • ServSafe certified and or certificate appropriate for the position level or the ability to obtain ServSafe certification or certificate appropriate to position level within 6 months of hire. 
  • Must possess appropriate ServSafe certification or certificate appropriate to position level for the duration of employment with CDS.

What We Would Like You To Have

  • Two years’ experience as a line cook or higher with team leadership experience. 
  • ServSafe certified.
